Taurasi Riserva D.O.C.G. 2010 Michele Perillo
Produced by Cantina Perillo in the hills of Castelfranci and Montemarano, this Taurasi Riserva D.O.C.G. is crafted from vines grown at 600-700 meters on clay-limestone soils under a continental climate ideal for Aglianico. Made from carefully selected grapes with yields limited to 30 quintals per hectare, it undergoes cold prefermentation maceration and controlled fermentation in stainless steel tanks. The wine then ages for 24 months in 20-hectoliter Slovenian oak barrels followed by at least 6 years of bottle maturation, developing exceptional complexity and elegance. It shows a deep ruby color and a broad, complex bouquet with notes of cherry, thyme, violet, wild berries, and mineral hints. On the palate, it is enveloping, elegant, and persistent, with a finish marked by plum, sour cherry, strawberry jam, and black pepper. Ideal with roasted red meats, game, spiced dishes, and aged cheeses, this wine demands patience to tame its powerful tannic structure.
