Michele Perillo’s Cantina Perillo crafts a premium Taurasi D.O.C.G. from five hectares of historic vineyards located in the hills of Castelfranci and Montemarano (Avellino), renowned areas for exceptional Campania wines. The vineyards sit between 600 and 700 meters above sea level, benefiting from a unique terroir characterized by clay-limestone and sandy soils, perfect for the Aglianico grape, an indigenous variety prized for its complexity and high polyphenol content.
The “coda di cavallo” Aglianico used in this Taurasi features loose clusters and small berries, resulting in low yields (around 30 quintals per hectare) and intensely concentrated flavors and tannins. Fermentation occurs in temperature-controlled stainless steel tanks with cold prefermentation maceration, followed by an extensive aging process of 24 months in a combination of barriques and 20-hectoliter oak casks, and a minimum of 5 years bottle maturation.
The Michele Perillo Taurasi D.O.C.G. shows a deep ruby red color with a complex and broad bouquet featuring ripe cherry, wild berries, thyme, violet, and distinctive mineral notes from the terroir. On the palate, it is powerful, elegant, and well-structured, with firm yet smooth tannins and a long finish dominated by plum, strawberry jam, and black pepper. This Campania wine pairs excellently with roasted red meats, game, spiced dishes, and aged cheeses.
