D’Araprì – Spumante Metodo Classico Brut
The D’Araprì Metodo Classico Brut showcases the remarkable potential of Puglia in the world of traditional-method sparkling wines. Founded in 1979 by three friends — D’Amico, Rapini and Priore, whose initials form the name of the winery — D’Araprì has always pursued a bold and distinctive vision: to produce only Metodo Classico sparkling wines, relying on the expressive strength of the local Bombino Bianco variety. This pioneering approach soon positioned the winery among the most respected producers in Southern Italy.
The vineyards are located in San Severo, between the Majella and the Gargano mountains, an area blessed with a well-ventilated microclimate that protects the vines and limits fungal pressure. Clay-limestone soils, low planting density and careful vineyard management ensure healthy, flavour-rich grapes. The Brut is crafted mainly from Bombino Bianco with a small addition of Pinot Noir, which contributes structure and finesse.
In the historic 17th-century cellars, the winemaking process mirrors that of Champagne’s artisanal récoltant-manipulants. Riddling and disgorgement are carried out entirely by hand, preserving authenticity and precision. After 24 months of ageing on the lees, the sparkling wine reveals a refined aromatic profile of yellow fruit, floral notes, bread crust and delicate minerality. The palate is creamy, dry and well-balanced, with a persistent and clean finish.
A sophisticated Metodo Classico that reflects Puglia’s identity and is perfect both as an elegant aperitif and as a companion to seafood-based dishes.
