Saumur-Champigny “Terres Chaudes” 2021 is one of the most distinctive vineyard expressions crafted by Thierry Germain at Domaine des Roches Neuves, a benchmark estate that has redefined the identity of Saumur-Champigny through biodynamic viticulture and an uncompromising respect for terroir. Each parcel is vinified to preserve its unique personality, allowing Cabernet Franc to express its full potential.
The vineyard is rooted in chalk-rich limestone subsoil with clay-sandy topsoils, a combination that gives the wine remarkable mineral tension, freshness and precision. Low yields and meticulous vineyard work ensure optimal ripeness while preserving aromatic purity and balance.
The grapes are harvested entirely by hand in small crates before careful sorting and complete destemming. Fermentation takes place with indigenous yeasts in truncated-cone vats following a short pre-fermentation maceration. The wine is then aged for twelve months on its fine lees in large wooden vats and oval oak casks, gaining texture and complexity while maintaining clarity and freshness.
Deep ruby in colour with violet highlights, the nose gradually unfolds into an elegant aromatic spectrum of blackcurrant, blueberry, cherry, blackberry and raspberry, followed by iris, violet and peony. With aeration, subtle notes of cedar, mint, black pepper, clove, cinnamon, bergamot and eucalyptus emerge, creating remarkable complexity and refinement.
The palate is focused, vibrant and beautifully structured. Ripe fruit is balanced by lively acidity, silky tannins and an unmistakable mineral backbone that carries the wine towards a long, savoury finish. Powerful without excess, it captures the finesse that defines Thierry Germain’s finest Cabernet Franc wines.
