Sancerre Blanc "Les Quarterons" 2016 Sebastien Riffault
Sancerre Blanc "Les Quarterons" is made from Sauvignon Blanc grapes grown by Domaine Sebastien Riffault following the principles of organic farming, for which the company has been certified since 2007. No chemical products are used in the vineyard or in the cellar. Work in the fields is done using horses so as not to compact the soil and to favour the oxygenation of the subsoil.
In the cellar, artisanal methods are used to get the best from the grapes. After soft pressing and spontaneous fermentation with indigenous yeasts in steel, the wine is left to mature on its lees for 24 months in steel tanks. No clarification or filtration is carried out at the time of bottling. Riffault's Sancerre Les Quarterons presents itself in the glass with a straw yellow colour, the nose expresses great finesse with a bouquet of white flowers, citrus fruits, notes of white-fleshed fruit, field herbs, honey and flint.
In the mouth it is intense and deep, very mineral and savoury with a long, lingering finish.
