A major turning point came with Denis Benoit, the third generation, who chose to devote himself entirely to viticulture and winemaking. In 2003, he founded Cellier Saint Benoît, transforming the family’s former farmhouse into a working cellar.
Today, the estate is in the hands of Benjamin Benoit, a gifted and visionary winemaker trained in Beaune, with valuable experience gained in Burgundy and New Zealand. Drawing from these diverse influences, Benjamin has developed a personal and highly respectful approach to winemaking, quickly establishing himself as one of the most compelling talents in the Jura. His work has been widely recognized, including the prestigious title of Winemaker of the Year from the Guide Hachette.
The domaine covers 6.25 hectares in Pupillin, a legendary Jura terroir known for its limestone-rich soils and ability to produce wines of great precision and character. Vineyard work follows a sustainable, near-organic philosophy, with all tasks carried out by hand and without tractors, preventing soil compaction and preserving microbial life. Benjamin even produces his own natural fertilizers, aiming to restore vitality to the soils and craft wines that are alive, expressive and deeply rooted in their environment.
A strong parcel-by-parcel approach defines the estate’s philosophy, allowing each vineyard to fully express its unique identity. In the cellar, time is a central element, symbolized by the hourglass depicted on the labels, a reminder that great wines require patience. Vinifications are gentle, with minimal intervention, and production remains intentionally limited to ensure the highest quality.
