Passito dei Colli Trevigiani “Pensieri” Andreola
The “Pensieri” Passito by Andreola comes from the Colli Trevigiani hills, in the Veneto region, and is crafted from Glera grapes carefully chosen from the best plots suited to the drying process. Harvested slightly early, the grapes retain a fresh acidic profile that harmonizes the natural sweetness of this passito. They are then placed on the traditional “Garzìz” racks, where natural air circulation allows them to dry and concentrate sugars and aromas.
Vinification is carried out in white, with gentle pressing and fermentation at controlled temperature, partly in stainless steel and partly in wooden barrels. The wine matures for one year before a further refinement in bottle, achieving perfect balance and complexity.
In the glass, it shines with a bright golden-amber hue. The bouquet is layered and evolving, starting with fresh apricot, tangerine and exotic fruit, followed by candied fruit, honey, roasted hazelnuts and delicate pastry notes, finishing with mineral hints and dried fruit. On the palate, it is refined, velvety and persistent, offering a superb balance between lively acidity and enveloping sweetness.
A remarkable dessert wine, it pairs beautifully with blue cheeses, dry pastries and leavened cakes, and also shines with foie gras or liver-based dishes.
