Spumante Metodo Classico Extra Brut 2018 Cristo di Campobello
The Metodo Classico Extra Brut 2018 by Cristo di Campobello embodies the excellence of Sicilian sparkling wine. Made from 100% Grillo grapes, it comes from hillside vineyards located between 250 and 400 meters above sea level, on calcareous and chalky soils that give the wine freshness, minerality and aromatic intensity.
Hand harvesting takes place in early August, selecting only the best clusters. After gentle pressing and cold settling, the must ferments in stainless steel and ages for six months on fine lees. The wine then undergoes tirage and secondary fermentation in bottle, following the Metodo Classico, with an extended aging period of 36 months on the lees. Manual remuage is performed before disgorgement, followed by at least three months of bottle refinement.
In the glass, it displays a delicate straw yellow with greenish hues and an elegant, persistent perlage. The bouquet is complex and refined, with aromas of bread crust, broom flowers, pear, peach, citrus and Mediterranean herbs. On the palate, it is creamy, fresh and well-balanced, with fruity returns, almond nuances and a long, persistent finish.
