Marsannay The Ancestral 2018 Sylvain Pataille

Marsannay L'Ancestrale 2018 is a natural wine produced by Domaine Sylvain Pataille. It is a cuvée made from Pinot Noir grapes aged between 60 and 80 years, entirely produced with biodynamic methods without the addition of sulphites or other chemicals. The grape harvest is manual, the yields are very low, about 20 hectare / hectare. Fermentation takes place for 50% with whole bunches in steel vats, then a slow and delicate pressing occurs, followed by 24 months of aging on fine lees in cask, of which 30% in new barrels. Marsannay The Ancestral of Pataille is ruby ​​red in color; the nose expresses elegant fruity hints of black cherry and sweet spices; on the palate it is fresh, fruity, harmonious with velvety tannins.

Domaine Sylvian Pataille is located in Marsannay and has become a real reference in the field of natural viticulture in Burgundy. Sylvain has always been against the principles of standardised wine, seeking to obtain, through biodynamic methods, bottles that authentically reflect the terroir of origin. Sylvain's winemaking philosophy is entirely natural: indigenous yeasts, no chemicals and maximum fermentation temperatures of around 32°C. Winemaking is carried out in stainless steel and fibreglass before going into barrel, ageing is very slow and no sulphur is used. In this way Pataille gives life to authentic and pure wines.
