In the Elio Altare cellar, winemaking is an art that preserves the authenticity of Dolcetto. During a short maceration on the skins, the grapes release their intense and vibrant aromas, which will then be captured in the final wine. The fermentation process takes place in steel, allowing the fruity characteristics of Dolcetto to shine without interference. A 10-month refinement in steel tanks completes the process, giving the wine its structure and vitality.
