The Empreinte Champagne by Doyard-Mahé is a refined Brut Blanc de Blancs, a true expression of the terroir in Vertus, a Premier Cru village in the Côte des Blancs. This Champagne is crafted exclusively from Chardonnay grapes grown in soils rich in fossils, limestone, and chalk, imparting a distinctive minerality and freshness to the palate.
The production process follows the highest standards: the grapes ferment in temperature-controlled tanks, completing malolactic fermentation for a smooth and balanced taste. Secondary fermentation occurs in the bottle using the traditional champenoise method, followed by 15 months of lees aging, which adds complexity and aromatic depth.
In the glass, it shows a light golden yellow hue with greenish highlights, and a fine, persistent effervescence. The bouquet reveals delicate notes of pear, lemon, lime blossom, and a slight vegetal nuance, enriched by accents of fresh almond. On the palate, it is lively and lean, with a pronounced mineral imprint and a delightful fruity aftertaste.
Ideal for aperitifs, Empreinte Champagne pairs wonderfully with grilled fish dishes or a selection of Japanese rolls, offering a sophisticated culinary experience.
