This Chablis Grand Cru Le Clos 2017 of the Domaine de L'Enclos is a fine french wine coming from 100% Chardonnay grapes from Grand Cru vineyards. The property covers an area of 0.67 ha. The vineyard was planted in 1964 and is located in the lower part of the hill facing Chablis. All the processing phases, from the vineyard to the winemaking up to the refinement of the wines are meticulously followed and processed according to natural methodology. Only a little SO2 is added to a limited extent after pressing. Alcoholic fermentation occurs naturally with indigenous yeasts from grapes and soil, as well as malolactic fermentation with natural juice bacteria. The wines are not cold treated. Before bottling, only light filtration is performed. The Chablis Grand Cru Les Clos 2017 shows a nose in which floral notes of white and mineral flowers prevail; the mouth is complex with a strong mineral sap and a great length. Served at a temperature of 12 °, this wine is excellent when served with fish dishes. It can safely rest in the cellar for a few years.
