Chablis 1er Cru "Montmains" 2017 Domaine L'Enclos
This Chablis 1er Cru Montmains 2017 is a fine French wine from the Burgundy region, produced by Domaine De l'Enclos. This wine is made from pure Chardonnay grapes from the eponymous 1er Cru vineyard, planted in 1971 by the current owner's grandfather, now belonging to the estate's 29 hectares of vines, 6 of which are certified organic and the rest in conversion. It is a great Chablis with an interesting structure and the typical minerality that distinguishes the type: straw yellow in colour with golden highlights, this Chablis 1er Cru Montmains from Domaine de l'Enclos expresses a complex bouquet of marked mineral notes on the nose, accompanied by aromas of ripe fruit, spicy and smoky notes. The mouthfeel of this Chablis is taut but at the same time well structured. It develops a nice texture in the mouth and a fairly well-built acidity for a savoury and mineral finish.

VINIFICATION: Alcoholic fermentation occurs naturally with indigenous yeasts from grapes and soil, as well as malolactic fermentation with natural juice bacteria. The wines are not cold treated. Before bottling, only light filtration is performed.
