The Chablis 1er Cru "Montée de Tonnerre" 2021 from Domaine Julien Brocard is a new addition to the winery's lineup starting from the 2020 vintage. Julien Brocard began converting this site to biodynamic agriculture in 2017, and 2020 was the first year it was certified biodynamic by Demeter. Located to the right of the grand cru valley, Julien considers Montée de Tonnerre the most complete premier cru, a wine with a perfect convergence of minerality, floral notes, and richness.
This Chardonnay draws its strength and energy from the loamy, calcareous soils in Burgundy. The geographic location of the Montée de Tonnerre vineyard is particularly advantageous, being right next to the Grand Cru hill of Chablis, with optimal southwest exposure.
Domaine Julien Brocard has been working biodynamically for many years, promoting a natural balance between the soil, plants, and local wildlife. The Chardonnay grapes used for this wine are grown without the use of pesticides, herbicides, or chemical fertilizers, following biodynamic principles that include using natural preparations and respecting lunar cycles.
The fermentation and aging of the Chablis 1er Cru "Montée de Tonnerre" 2021 take place in neutral foudres, allowing the wine to develop complexity without excessive wood influence. This process preserves the purity of the fruit and enhances the mineral characteristics of the terroir.
On the nose, this Chablis shows a smoky and chalky minerality that continues on the palate. The aromas oscillate between Granny Smith apple and lime, accompanied by firm acidity and a salty finish. The wine's structure is well-balanced, with richness that does not overpower the freshness and precision of the mineral notes.
The Chablis 1er Cru "Montée de Tonnerre" 2021 is an excellent wine to pair with seafood, but it also pairs well with more complex fish dishes. To fully appreciate its qualities, it is recommended not to serve it too cold, allowing it to open up and express all its aromatic nuances in a round Burgundy glass.
