The designation of the Bourgogne Blanc Les Terroirs Der Daix natural wine is composed of 2 qualities of vines aged between 15 and 35 years grown on a clayey-calcareous soil consisting of fine clays and marls .
The annual production is between 40 and 45 hl.
After squeezing quste grapes from natural wine , a 24-hour settling is carried out while the alcoholic fermentation is activated naturally and the temperature stabilizes between 18 and 22 ° C.
At the end of the fermentation, the natural wine is put into barrels where the malolactic fermentation takes place.
A batonnage is carried out every week until January and, before bottling, this wine natural is withdrawn to allow a homogenization of the cuvée.
This natural wine is characterized by aromas of bread crust, hazelnut in youth and evolves on mineral notes after 4-6 years.
It gives a round and fine mouth with a good balance that leads to highlight aromas, particularly suitable for accompanying fish and cheese dishes.
