Bourgogne “Les Châtaigners” 2020 Hubert Lamy
The Bourgogne Chardonnay “Les Châtaigners” 2020 from Domaine Hubert Lamy is a remarkable example of how a regional Burgundy can reach outstanding levels of quality when exceptional vineyards meet uncompromising winemaking. The fruit comes from four parcels located around Saint-Aubin, an area where Olivier Lamy has spent decades refining his understanding of terroir and vine expression.
The vineyards are farmed with meticulous care, following sustainable practices and low yields to maximize concentration while preserving freshness. Harvesting is intentionally carried out at optimal physiological ripeness, allowing the grapes to develop complexity without sacrificing the vibrant acidity that defines the estate’s style.
Winemaking follows a minimalist philosophy designed to preserve purity. After gentle pressing, fermentation takes place slowly in large oak barrels with no new wood influence, allowing the fruit and terroir to remain at the forefront. The wine then spends approximately twelve months ageing in barrel before an additional six to twelve months in tank, gaining precision and harmony prior to bottling.
The wine displays a bright golden straw colour. The nose is elegant and finely layered, revealing aromas of preserved lemon, white peach, green apple and citrus zest alongside delicate notes of white flowers, flint, wet stone, beeswax and subtle hazelnut. With aeration, pronounced chalky minerality and saline nuances become increasingly expressive.
On the palate, the wine is vibrant, energetic and beautifully focused. A lively acidity drives flavours of ripe orchard fruit and citrus, while the texture remains silky yet remarkably tense. The limestone soils impart impressive mineral depth and a long, savoury finish that lingers with remarkable precision. Despite its regional classification, this is a Chardonnay of serious complexity and outstanding ageing potential.
It pairs beautifully with oysters, shellfish, grilled fish, scallops, lobster, delicate poultry dishes, creamy risottos and fresh goat’s cheeses. Its balance of richness and freshness also makes it an excellent partner for refined gastronomic cuisine.
