Bourgogne Aligotè Champ Forey 2018 is a natural wine produced by Sylvain Pataille. Pataille is one of the most important names for the production of natural wines in Burgundy, processed with care and respect for the environment, without sulphites or other chemicals. This white wine is obtained from Aligotè grapes, the most common white grape variety in Burgundy after Chardonnay, which come from an area called Champ Forey, with vineyards facing east and soils of gravelly origin. The vineyard is located at an altitude of 250 meters with a fairly pronounced slope and exposure to the east.

Domaine Sylvian Pataille is located in Marsannay and has become a real reference in the field of natural viticulture in Burgundy. Sylvain has always been against the principles of standardised wine, seeking to obtain, through biodynamic methods, bottles that authentically reflect the terroir of origin. Sylvain's winemaking philosophy is entirely natural: indigenous yeasts, no chemicals and maximum fermentation temperatures of around 32°C. Winemaking is carried out in stainless steel and fibreglass before going into barrel, ageing is very slow and no sulphur is used. In this way Pataille gives life to authentic and pure wines.
