Barolo Paiagallo 2021 Magnum Giovanni Canonica
The Barolo Paiagallo 2021 by Giovanni Canonica stands as a benchmark of traditional Barolo, a wine deeply rooted in the culture and soil of the Langhe. Produced from a small 3-hectare vineyard in the Paiagallo cru, it is made from 100% Nebbiolo grapes cultivated without herbicides or synthetic chemicals, following a fully natural approach to viticulture.
In the cellar, Canonica’s winemaking remains uncompromisingly pure: spontaneous fermentations, long macerations on the skins, and no temperature control. The wine is aged for at least 36 months in large Slavonian oak barrels and cement, a testament to time and tradition.
In the glass, it reveals a delicate and transparent pale garnet red, with complex and evocative aromas of cherry, sour cherry, forest floor, gentian root, eucalyptus, and spices. On the palate, it is vibrant, juicy, and energetic, with tightly-knit, elegant tannins and extraordinary length. An austere, soulful Barolo that captures the essence of its terroir and defies the decades. For true connoisseurs.
