Arbois Pupillin Chardonnay 2016 Pierre Overnoy
Arbois Pupillin Savagnin Ouillé from Maison Pierre Overnoy is a fine white wine from the Jura, a pure, elegant, creamy and at the same time lively Chardonnay, made using natural methods. It is a pure, elegant, creamy and lively Chardonnay made according to natural methods. It fully represents the style of Pierre Overnoy, who during his studies and research has experimented with the method of full barrels for white wines and no use of sulphites, in order to obtain pure wines that are as faithful as possible to the terroir of Pupillin.
It is made from Chardonnay grapes from 20-year-old vines from a calcareous soil with white clay on the surface. Fermentation is spontaneous and the wine is matured on the fine lees in 26 hl used oak barrels for 13 months.
Intense straw yellow in colour, it expresses on the nose scents of dried fruit and slightly smoky buttery notes. The taste is creamy and enveloping, with a nice minerality and freshness.

GRAPE VARIETIES: 100% Chardonnay.
VINIFICATION: fermentation is spontaneous with maceration on the skins in 25 hl stainless steel tanks, while refinement takes place in full barrels for 8 months.
