Bertrand Gautherot is the owner of Vouette et Sorbée, a small RM (récoltant manipulant) producer, located in Buxières-sur-Arce, in the Aube, exactly in the Côte des Bar.

The vineyards, with an average age of 21, are rooted in a 5-hectare plot of the upper Jurassic. The harvest is manual and develops in about 3 weeks.

From this point everything is simple: without pumping, the juice is poured into 400-liter drums, parts or barrels, of your choice. The fermentations are due to the yeasts present on the flowering of the berries. The élevage continues until spring when the malolactic fermentation takes place naturally. All winery operations are made by people who work the vineyards of the area, fully aware, involved and proud of themselves.

The Vouette et Sorbée champagne range is represented primarily by the Fidèle cuvée, made up of pure Pinot Noir from the "kimmeridgiano" ground of the lieu-dit Vouette, assembled with that of the parcel of Sorbée, which lies on the calcareous soil of the portland, and is collected very early. The range is then completed by the cuvée Blanc d'Argile, Chardonnay in purity, and Saignée de Sorbée, 100% of Pinot Noir rosé produced with the de saignée method.

All the champagne is strictly extra-brut, clean and pure.
