The journey of Lilian and Sophie Bauchet is not your typical winemaking story. Far from growing up among vines, their backgrounds were in completely different fields—Lilian was an IT engineer, Sophie worked in other industries. But driven by a deep and persistent passion for natural wine, they made a bold decision: to leave their stable lives behind and dedicate themselves entirely to viticulture. That moment marked the beginning of a remarkable adventure that would transform them into one of the most compelling names in the Beaujolais natural wine movement.

In 2007, they purchased a modest house and six hectares of land in Lancié, a small village located between Morgon and Fleurie, two of the most prestigious Beaujolais crus. While their land lies outside the official appellations, this geographic freedom became their playground—giving them the ability to experiment without rigid regulatory constraints.

With no formal oenological training, they sought guidance from two pioneers of the natural wine scene: Philippe Jambon and Julie Baligny. These mentors instilled in them a respect for biodynamics, low-intervention practices, and a sensitivity to the rhythms of the land. From the very start, manual labor, spontaneity and natural balance defined their approach both in the vineyard and in the cellar.

Their methods are nothing short of radical in their simplicity. They do not top their vines, allowing the natural foliage to grow tall. This technique encourages a balance between sunlight and shade, resulting in more even grape ripening and a refined aromatic profile. Horses are used for tilling, and no chemicals, synthetic treatments, or sulfites are used at any stage. Every bottle is unfiltered, unclarified, and alive.

In 2014, Lilian took a step further by exploring hybrid grape varieties. These disease-resistant grapes allow for completely treatment-free viticulture, even in challenging vintages. An old tennis court on their property became the first test site for this groundbreaking approach. Though once dismissed for lacking complexity, hybrid grapes are now at the center of an exciting revolution in natural winemaking—and Lilian is one of its leading voices.

He now consults and collaborates with winemakers like Romain des Grottes and Robin Goutallier, sharing his knowledge and passion. His work proves that sustainability, innovation, and great wine can go hand in hand.
