Domaine Boris Jefferies, natural and unconventional wines from Languedoc

Domaine Boris Jefferies is a French Languedoc winery with a very original story: Joe Jefferies, originally from England, was in the south of France to help his father fix up a house. There he met a girl, fell in love and never returned. They are now married and live together in the village of Caux about half an hour south of Beziers in Languedoc. Having worked as a bicycle touring guide for several years, Joe got to know some local wine producers and fell in love with the wines of the area.

His father-in-law owned a plot of land where he mainly grew Grenache Blanc, so Joe decided to take it over and began his own vigneron business. The vineyards are located on the remains of an old lava flow of a long extinct volcano in the area, so the soils are rich in basalt and give the wines great freshness and minerality. Joe chooses to harvest a little earlier than all his neighbours, while in the cellar the fermentation takes place in fibreglass, with minimal intervention.

In fact, he decides to follow a completely natural approach, which is why his wines need time to open up completely, and are always different, depending on the vintage. Joe's wines are pure, natural in the most authentic sense of the word, totally unconventional: The reds, while not overly tannic, always have some structure and body while the whites tend to be herbaceous and structured.
