The Domaine Hubert Lignier is a historic winery in Morey Saint Denis, Burgundy, which was founded back in 1880 by Jacques Lignier, and is now run by Laurent and his father Hubert. The company consists of 9 hectares of vineyards spread over 24 appellations (from regional appellations to grand crus).
Since the 1990s, attention has been paid to the concept of environmental sustainability, and since 2011 the company has been working with organic farming in both the vineyard and the cellar. As far as winemaking is concerned, interventionism is kept to a minimum, the most important aspect being to bring in healthy and perfectly ripe grapes, an essential basis for quality products.
Refinement on the lees is prolonged for 20-22 months and the percentage of new wood never exceeds 30%. Bottling is done by gravity, without clarification or filtration, in order to preserve the original characteristics of the grapes.
