Domaine Jean Paul & Benoît Droin, Chablis Premier Cru and Grand Cru wines
The Domaine Jean Paul & Benoît Droin has been located in Chablis, in the northernmost part of Burgundy, for more than 500 years. The Domaine's 25 hectares are now managed by Jean Paul Droin, son of Benoît who left him at the helm in 1999.
The Droin family owns vineyards in almost all the AOC Chablis denominations, from Petit Chablis to the finest Chablis Grand Cru, including Chablis village wines and Chablis Premier Cru.
Domaine Droin's work begins in the vineyard, where all activities are carried out with the aim of bringing the best possible grapes to the cellar, with the highest possible concentration of every variegated organoleptic nuance that Burgundy Chardonnay can offer.
Once in the cellar, the grapes are pressed with the most modern technologies before fermenting at controlled temperature in steel tanks, as foreseen by the Chablis winemaking tradition. Aging also takes place in stainless steel tanks for Chablis and Petit Chablis, while the fine Chablis Premier Cru and Chablis Grand Cru, the flagship of Domaine Droin, are left to mature in wooden barrels for about 10 months before being filtered and bottled.
