Domaine Dandelion, founded in 2016 by Morgane Seuillot in Mavilly-Mandelot, Hautes Côtes de Beaune, is a tale of passion and sustainability. Taking over one hectare of family vines, Morgane, along with partner Christian Knott, expanded the domaine, planting vines around their home in Mavilly. The Hautes Côtes de Beaune offers a unique terroir, allowing patient harvesting with grapes benefiting from the freshness of altitude plots.
Guided by Christian's experience as the former cellar master at Chandon de Briailles, the domaine embraces natural practices in both vineyard and cellar. No sulfur in the vines, minimal copper doses, horse plowing, and natural treatments characterize their approach. Grapes, picked at full maturity, are pressed on an old vertical press and aged in multi-wine barrels. Vinification is additive-free, and bottling is done without pumps.
Winter 2020 brought a meeting with Morgane and Christian, revealing their meticulous work. The wines, marked by delicacy, precision, and beautiful balances, reflect Morgane's attention to detail – from vineyard work to handcrafted labels. The domaine, renowned for natural wines, faces challenges like frost-affected vintages (2019, 2021), enhancing its allure.
Morgane, supported by Christian, embodies the essence of the estate, prioritizing sustainable practices. Hand or horse cultivation, vegetable preparations instead of sulfur, and attention to detail extend to their cider production, using apples cultivated by the same principles. Originating from the region, Morgane's background and Christian's experience contribute to Domaine Dandelion's unique character, making it a highly sought-after gem in the realm of natural wine.
