The Domaine de Chaude Ecuelle is one of the most authentic and traditional wineries of the Chablis region in Burgundy. Its history dates back to the early 20th century, when brothers Henri and Clovis Vilain, born in 1907 and 1911, developed the family vineyard, handing down their knowledge and passion to future generations. Later, Gabriel and Lucette began bottling and marketing the wines, giving the estate its modern identity. Today, some parcels still bear the names of the founders, such as the “vigne d’Henri” and the “vigne de Clovis”, a tribute to the family’s heritage and deep connection to the land.

The name “Chaude Ecuelle” itself refers to an ancient lieu-dit where winegrowers worked vineyards far from the villages. To warm their meals, they used terracotta bowls called “écuelles”, a symbol of peasant life and resilience that continues to inspire the estate today.

The philosophy of the Domaine de Chaude Ecuelle is based on environmental respect, traditional vine cultivation and careful winemaking practices designed to enhance the purity of the terroir. Each family member is personally involved in all stages of production, from pruning to harvesting to marketing, ensuring complete control and a holistic vision of the estate’s activity.

The vineyards are planted on the unique Kimmeridgian soils of Chablis, composed of marl and limestone rich in marine fossils, such as small oysters, which give the wines their distinctive freshness, minerality and saline edge. This signature character makes Chaude Ecuelle’s wines elegant, age-worthy, and particularly well-suited to pairings with seafood, shellfish and fish dishes.
