Francesco Paolo Valentini produces it following a long family tradition that dates back to the 1600s and has made him famous as a craftsman of oil and wine. Production is based on a combination of family tradition and state-of-the-art techniques to preserve the aromaticity of the fruit and continuously improve quality.
The Extra Virgin Olive Oil is made from the Dritta or Loretana olive variety, typical of the Loreto Aprutino area, where Francesco Paolo Valentini grows his olive trees on 50 hectares without the use of synthetic substances. Extraction is done only by mechanical methods and no filtration is done, to preserve the authentic taste of the fruit.
The very high level of polyphenols and low acidity make it genuine, intense and long-lasting. Francesco Paolo Valentini markets his oil only in the spring following the harvest, when it is perfectly ripe. Valentini Oil is a perfect balance of elegance and expressiveness, enhancing every dish, from fish to legume soups.
