The mechanical harvest, executed at the optimal moment of ripeness and sorted with optical screening equipment, ensures the integrity of the grapes.
Fermentation takes place in coated concrete tanks equipped with temperature control, utilizing winemaking techniques such as pumpovers and rack and return according to the vintage's needs. This artisanal process preserves the purity of the grape characteristics, allowing the wine to fully express its identity.
