Domaine Ca Boit Libre's Mon Blanc des Alpes 2020 is a dry white wine produced in the Savoie region of France using indigenous grapes of the Chasselas variety. These grapes are grown in vineyards located at an altitude between 400 and 500 meters above sea level, on clay and limestone soils characteristic of the Alpine region.
The grapes are grown according to the principles of organic farming, which involves the use of natural techniques to maintain soil and plant health, without the use of pesticides or chemical fertilizers. The grapes are hand-picked in small crates to preserve the integrity of the fruit and immediately transported to the winery for vinification.
The winemaking process involves soft pressing of whole grapes and temperature-controlled fermentation in stainless steel tanks. The wine is matured on the fine lees for about four months to give it greater aromatic complexity.
Mon Blanc des Alpes 2020 is a bright straw-colored wine with greenish highlights. The nose reveals notes of white fruit, such as apple and peach, combined with a floral aroma of hawthorn. In the mouth it is fresh and mineral, with a pleasant acid thrust and a note of saltiness typical of wines from the Alpine region. The aromatic persistence is long and leaves a pleasant citrus aftertaste.
