Les 2 Vignes 2016 is a fine and elegant Chardonnay and Pinot Noir cuvée produced in the Champagne region of France by Tristan Hyest. The name Les 2 Vignes refers to the two Lieux-Dits, Les Longues Fouines and Les Oeuillettes, owned by the estate, which provide the grapes for the production of this wine.
The winemaking techniques used to produce Tristan Hyest's 2016 Champagne Les 2 Vignes are rigorous and traditional. The grapes are harvested by hand and carefully selected to ensure maximum quality. After pressing, the must is fermented in oak barrels and undergoes a second fermentation in the bottle, using the champenoise method. The wine is aged in the bottle for at least 4 years before being marketed, which gives it a unique structure and complexity.
