Description

Champagne Extra Brut Sonate Fleury

The Extra Brut "Sonate" is a fine Champagne produced according to natural methods by the Maison Fleury, important for the history of the Maison because it is the first label produced without the addition of sulphites. It is made from a blend of 60% Pinot Noir and 40% Chardonnay, from vines cultivated biodynamically on kimmeridgian soils of a calcareous-clay matrix.

After manual harvesting and careful selection of the best grapes, 55% of the wine is fermented in stainless steel tanks and the remaining 45% in oak barrels. The re-fermentation takes place in the bottle according to the principles of the Champenoise Method and does not involve any addition of sulphur dioxide before bottling. Finally, the Champagne remains to mature for at least 60 months on the lees in the bottle.

Fleury's Sonate has a beautiful, luminous straw yellow colour with golden highlights. The complex and elegant nose offers aromas of apple, citrus, almond and bread crust. The deep sip is supported by a nice freshness and sapidity.

The Maison Fleury has ancient origins dating back to 1895. Today, Jean-Pierre Fleury manages the vineyards without any synthetic products in full respect of nature, and was the first vigneron in Champagne to convert to biodynamic agriculture, in 1989.
