Vin de Savoie Cosmos 2020 Corentin Houillon

'Cosmos' Vin de France 2020 is a great expression of Savoie red wine from Mendeuse grapes from Chautagne produced using biodynamic methods. The grapes grow on a terroir of molasses and Jet du Quaternaire. Vinification takes place with 50% destemming and 50% whole cluster.

The fermentation is spontaneous using only indigenous yeasts with 25 days of maceration on the skins, after which the wine is partially aged in barrels and then bottled without salforosa or filtration.

This wine is a beautiful expression of Mendeuse from this area: deep ruby red in colour, it offers a nose of black fruits that give way to a very rich bouquet of spices. The palate is balanced between freshness and complexity, ample and with character.
