THE PHILOSOPHY OF SYLVAIN PATAILLE
The history of the Gruhier winery is ancient, it began precisely in 1212 when some Cistercian monks settled there baptizing the structure "Le Petit Quincy", later changed to Petit Quincy Abbey and finally "Castle of Epineuil"
The monastery was destroyed, burned, rebuilt and re-sold as a national asset after the French Revolution, until it is finally acquired by the Gruhier family and transformed into the cellar

The domaine Sylvain Pataille is located in Masannay, the northernmost area of the Cote d'Or near Dijon, in 1999, when Sylvain after years of apprenticeship in other wineries (also as an oenologist at Château de la Tour) decided to set up his own business to produce biodynamic wines.
This box was designed to give an overview of the Burgundy wines of Domaine Sylvain Pataille, still unfortunately and fortunately little known.
WHAT IT CONTAINS:
- BOURGOGNE ALIGOTÈ 2018: 100% Aligoté, is that exactly what you would expect from a bottle of this type, a simple, straightforward wine with a nice freshness and rich flavor, a wine suitable for any occasion, from aperitif to fish, the only negative note? One bottle is not enough.
- MARSANNAY CHARDONNAY ROSE: Chardonnay Rose is a genetic mutation of the Chardonnay typical of the town of Marsannay, discovered by Sylvain Pataille in 2002. What stands out most is the nose, whose freshness is almost reminiscent of the great Rieslings, in the mouth the acidity and freshness reign with stone and salt to accompany.
- MARSANNAY ROUGE 2017: This cuveé comes from old vines planted on four different soils, the nose has a bouquet of red fruits, violet and mint. In the mouth the wine is silky with very fine tannins and an amazing minerality.
