Chablis is the northernmost wine-producing region of Burgundy, famous for its Chardonnay-based whites that characterize almost all the vineyards surrounding the municipality. Despite being an integral part of Burgundy, it overturns the canons of traditional refinement by preferring stainless steel to casks, a detail that gives young wines that note defined as "steel". The cold climate dampens the marked fruity scents typical of Chardonnay, giving it distinct acidity and unusual freshness, while the terroir of Chablis infuses the body of its whites with a characteristic note of "flint".
