Domaine Guillemot, authentic and fine wines from Burgundy

Domaine Guillemot-Michel is a small family business located in Quintaine, in the heart of the Virè-Clessè area, one of the three main production areas of Maconne, in Burgundy. In 1982, after studying viticulture and oenology, Pierrette Michel and her husband Marc Guillemot took over the estate owned by Pierrette's parents.

In 1985, they bottled their first vintage under the name Guillemot-Michel, converting the vineyard to organic farming and then to biodynamic in 1991. Since 2012, his daughter Sophie has been in charge of the estate with the help of her parents and her husband Gautier. Today the estate has more than 6 hectares of old Chardonnay vineyards near Quintane, with an average age of 55 years. Biodynamic farming principles are followed, which tends to completely reject chemical products and replace them with natural preparations of plant origin.

The vineyard is east-facing and lies on a soil of sediments rich in limestone. The grapes are harvested only when they have reached the maximum degree of ripeness, then fermentation is spontaneous thanks to the use of indigenous yeasts and bacteria, and takes place in cement tanks.
