Bollinger, unlike the other big champagne houses, is not a negociants, it does not buy grapes from other growers, but it is a vigneron, that is to say it grows and produces its own grapes for its own champagnes, in its vineyards are grown the three varieties that are the basis of the French champagne cuvée: Pinot Noir, which represents almost 60% of the production, Pinot Meunier and Chardonnay.

 

Most of Bollinger's champagne vineyards are Grand Cru and two plots have even survived the phylloxera epidemic of the last century.

 

The cellars of the Maison Bollinger run for miles and miles in stone tunnels underground, it is here that the champagne production process takes place according to tradition, for example the remuage of the bottles is still done by hand.
