Chianti Classico "Filetta di Lamole" 2015 Fontodi
The Chianti Classico "Filetta di Lamole" Fontodi was born in the valuable valley of the "Conca d'Oro" in the lands of Chianti, here the typical Tuscan grape variety, Sangiovese, reaches particular peaks of elegance and finesse. This fine Tuscan red wine is characterized by a beautiful freshness given to it by the altitude of the "Filetta" 600 meters, the aging in large barrels allows to reach a balance and impeccable elegance.
The Fontodi "Filetta di Lamole" is a Chianti Classico produced according to the dictates of organic farming, the vineyard is considered the center of all the activity of Fontodi and, precisely for this reason, the estate certified organic, with the utmost respect for nature and environmental biodiversity.
The "Filetta di Lamole" Chianti Classico is a natural wine without sulphites, a splendid expression of pure Sangiovese, born from the best bunches from the vineyard of the same name at an altitude of 600 metres. Fermentation takes place in temperature-controlled steel tanks, with classic vinification with maceration on the skins and, before bottling, matures for 24 months in large French oak barrels. The glass has an intense ruby red colour with luminous reflections. The nose opens with scents of violet petals, licorice root, cherry, small red berry fruits, hints of underbrush, spicy sensations, hints of blond tobacco and leather. The sip is smooth and elegant, with good aromatic complexity, balanced by a lively freshness and a long and persistent finish.

Natural wines without sulphites: the philosophy behind winemaking
Natural wine does not only mean without the addition of sulphites, it means working according to the ancient winemaking traditions with sulphur and copper in the vineyard, based on the fatigue of manual work, the least interventionist activity possible, letting the cycles of Nature do most of the work until the vinification of the grape juice as it is, without substances some if not their own.
The result of all this production philosophy is natural wine, a non-standardised wine that best expresses its identity, its terroir and its most intrinsic characteristics.
Natural wines are much more difficult to produce than the wines to which we are traditionally accustomed, because when there is no help from the use of balancing substances and support for winemaking the wine cannot be a way to put: either it is good or it is bad.
Natural wine was born as a commitment of natural artisan winemakers to raise their product to the standardization of taste and identity of the wine and the vineyard that now, thanks to the widespread use of chemistry and new technologies, leads to products with always the same flavors, regardless of the production area or type of cultivation used.
Biodynamic wine or natural wine, on the other hand, tends to enhance its identity, its essence, diversifying thanks to the exclusive organoleptic qualities that the precise terroir it belongs to provides to the grapes it hosts and that can be expressed only thanks to activities that do not intervene in the cultivation and winemaking processes.
