Champagne Blanc de Blancs d'Ay 2007 Gaston Chiquet
This fine Champagne Blanc de Blancs d'Ay 2007 is a great class and balance of natural Champagne from the labels produced by Gaston Chiquet. The company is located east of the Vallée de la Marne where Chardonnay, Pinot nero and Pinot Maunieur are grown according to the diversity of the area. Chardonnay is present around 40% and is grown on the terroirs of Dizy, Hautvillers and Aÿ. It is said that Gaston Chiquet is a real precursor of the grape variety. After knowing how to select the vines of Chardonnay for his terroirs of the Vallée de la Marne, he was the first to face the cuvée called Blanc de Blancs d’Aÿ. In short, a white grape variety on a terroir historically reserved for Pinots Noirs. It is for this reason that its Champagnes have character, without missing softness and balance. After alcoholic fermentation and malolactic fermentation in small temperature-controlled tanks, the Champagne Blanc de Blancs d'Ay 2007 rests for 3-4 months before aging on the yeasts for 9 years. Before being labeled it still rests for a period of 3 to 6 months. It shows a bright straw yellow with a subtle and numerous perlage. On the nose the leaves of the expected smoky scents, veering on spice like pepper, carob and licorice. Then chestnut honey and caramelized notes, dried flowers, chamomile. A treasure enclosed in this bouquet! On the palate it is enveloping, with an extraordinary softness compensated by a good acidity and flavor. Persistent with a long finish of cocoa and hazelnuts. A Champagne that will conquer you.
