Chablis Séchet 1er Cru 2015 Dauvissat
The Chardonnay grapes that are used to make this Chablis Séchet 1er Cru from Dauvissat come from a vineyard within the premier cru Vaillons, which with its 128 hectares under vine is the largest vineyard in the appellation.
Sechet is located in the upper part of the vineyard, with vines facing south-east, growing on soil characterised by typical Kimmerian limestone, which gives the wines intense minerality. The shallow soil allows the grapes to ripen quickly, yet this label has a more lively and nervous character than the others, so that ageing in oak barrels is essential.
The Séchet has a luminous straw-yellow colour and a very mineral bouquet with vegetal and citrus notes on the nose. The taste is structured but strongly taut and lively.

WINE-MAKING: Pressing and settling of the must, slow fermentation at low temperature in cement vats, where the wine remains until after malolactic fermentation (about one year), then it is transferred into oak barrels.
