Chablis Grand Cru Les Clos 2018 Droin
A Chablis Grand Cru Les Clos 2018 is a Burgundy white wine produced by Domaine Droin. The highest level of Grand Cru in the Droin range, it comes from an area where all types of Kimmeridgian soils coexist: at the top they are thinner, stony and calcareous, at the bottom they are deeper and more clayey, and in the middle there is a strip of blue clay. It is the lord of the Grands Crus. It gives wines of exceptional rectitude and power by virtue of its volume and intensity. It expresses a vast aromatic register with notes of ripe fruit such as peach but also oyster shell or smoke. On the palate it impresses with its freshness, power and mineral balance. There is a subtle reduction brought by iodine aromas of oyster shell, lemon and flint. It is a great complex wine with exceptional ageing potential. It will go well with all noble fish (monkfish, turbot) or with spicier dishes such as sushi.

VINIFICATION: pneumatic pressing, fermentation with indigenous yeasts partly in stainless steel tanks and partly in barriques, malolactic fermentation then blending after 8-10 months. Ageing if necessary, light filtration and bottling.
