The 2016 Chablis 1er Cru Vaillons is a fine wine produced by Dauvissat. This region represents the most northern wine area of the whole Burgundy, a wine land characterized by a very particular micro climate because of its exposure, mainly cultivated with Chardonnay. Chardonnay from Chablis is not, however, the usual white wine we are used to: the cooler climate of this region together with the layers of limestone rich in fossils and a permeable but well drained soil, leads the roots to the extreme absorption of all the micro particularities of the terroir, assuming a typical bouquet decidedly more mineral characterized by the famous gunpowder which makes Chablis great.

Chablis 1er Cru Vaillons 2016 Dauvissat

The 2016 Chablis 1er Cru Vaillons is a fine wine produced by Dauvissat. The Chardonnay grapes come from the 1er Cru Les Vaillons vineyard, and it is one of the most expressive releases in Dauvissat's range. This chablis is a rich and powerful white on the palate, a wine that explodes in the mouth from its first sip with such intensity that it seems to be a concentrate of minerality and freshness. It is silky and velvety, yet rich and with great energy. Its bouquet is a range of citrus scents perfectly blended with a splendid minerality and freshness; the finish, balanced and built on a solid acidic texture, is extraordinarily persistent and long. It is a wine which, all things considered, cannot be considered young anymore, it has lost the characteristic hint of steel typical of chablis in excessive youth, however it is still capable of resting for many years, a distinctive trait of Dauvissat's wines.

WINE-MAKING: pressing and settling of the must, slow fermentation at low temperature in cement tanks, where the wine remains until after the malolactic fermentation (about one year), then it is transferred into oak barrels.

The Domaine Dauvissat is considered one of the two fathers of Chablis wines together with the former Domaine Ravaneau, thanks to wines with an unmistakable style, with a superior technique and absolute purity. 

Since 2002, Domaine Dauvissat has been working in biodynamic agriculture, the natural wines of Dauvissat are born spontaneous fermentations, without clarification and batonnage. The vinification and subsequent maturation of the Chablis Dauvissat wines takes place according to tradition in steel and for a small part in wood, without ever exceeding, there is in fact no trace of wood on tasting.

Domaine Dauvissat has 14 hectares of which 2.70ha of Chablis Grand Cru for an average production of 80,000 bottles.

The Chablis Dauvissat are wines already enjoyable in their youth with a full and elegant juice but with almost infinite aging capacity, given the size of the Domaine, unfortunately the bottles are subject to speculation and are in fact unobtainable in the market.
