Chablis 1er Cru Vaillons 2015 Droin
Chablis 1er Cru Vaillons 2015 is a French white wine from the Burgundy region, particularly from the Chablis area, produced by Droin. It is an elegant wine with great ageing potential, but it can give great satisfaction even when drunk young. Vaillons Premier Cru from Domaine Jean-Paul and Benoît Droin is made from Chardonnay grapes from 5 different climates (Epinottes, Roncières, Séchet, Chatains and Beugnons) and is characterised by an elegant bouquet of fresh fruit and flowers and slight iodine notes. The sunny exposure of the vineyards means that this wine is a little softer and less austere than the classic Chablis. It ages in wood for about 10 months, and shows a beautiful intense straw colour, for a very aromatic nose of fresh white flesh fruit, citrus fruits and white flowers, with mineral notes. In the mouth it is soft and enveloping, with a savoury finish.

GRAPES: 100% Chardonnay
VINIFICATION: pneumatic pressing, fermentation with indigenous yeasts partly in stainless steel tanks and partly in barriques, malolactic fermentation then blending after 8-10 months. Ageing if necessary, light filtration and bottling.
