Bourgogne Blanc "Cras" 2018 Domaine de La Cras Marc Soyard
Bourgogne Blanc "Cras" Monopole 2018 is a French white wine produced in the Burgundy region by Marc Soyard's Domaine de La Cras. The grapes used are Chardonnay from biodynamically grown vines planted in 1985 on a single 3 ha vineyard parcel in the Coteaux de Dijon area on clay-limestone and pebbly soils.
The grapes are hand-picked and softly pressed to preserve all their quality. Fermentation takes place in French oak (25% new barrels, 25% 1-wine barrels and 50% 2-wine barrels) for 11 months, along with malolactic fermentation. Regular batonnage on fine lees for 6 months gives complexity to the wine.
The nose opens with aromas of hawthorn, white peach and jammy golden apple. Notes of almond and vanilla blend with mineral hints reminiscent of flint.
The palate is a structured wine with excellent acidity that gives freshness and remarkable persistence. We rediscover ripe white fruit, accompanied by sweet notes of honey and a long savory finish reminiscent of the sea.
A wine with a complex but elegant character, perfect to accompany shellfish, fish in white or sheep's milk cheeses. Its structure also allows it to tackle important poultry or pork dishes.
