Barolo Paiagallo 2016 Canonica
Barolo Paiagallo is a fine Italian wine produced by Canonica. It is made from 100% Nebbiolo grapes from the Paigallo vineyard in Barolo in the province of Cuneo, which has 1.7 hectares with plants of an average age of 18 years, which grow on clayey soil. After the manual harvest with small wooden crates, vinification follows with mechanical destemming, spontaneous fermentation for 30-40 days without temperature control; manual and mechanical pumping over and punching down. Aging takes place in concrete tanks and 20 hl Slavonian oak barrels. Barolo Paiagallo shows a ruby red color with garnet reflections. At sight it shows a ruby red color with garnet reflections, while on the nose it is intense and complex cpm fruity, spicy, undergrowth and mineral hints. In the mouth it is full, enveloping, with silky tannins.
