Description

100% Cabernet Franc from the Saumur area. Sylvain Dittiere plays this terroir very well. The vineyard from which this wine is made has subsoil of sand, silt and clay.

In the vineyard there is a lot of attention to all the details, above all to try to always get the right maturation and balance.

Natural vinification, the maceration of the grapes takes place in truncated conical barrels without the use of sulfur dioxide. Aging in small-sized used barrels sourced partly from Clos Rougeard, partly from Haut Brion. No filtration, or clarification, is used a small part of sulfur dioxide in the bottling phase.

Dark ruby red color with a fingernail denoting a light garnet. On the nose we find notes of ripe red fruits, spices and an elegant vegetal note that refreshes the olfactory framework.

In the mouth the wine is coherent, as soon as it touches the palate there is a note of warmth, roundness, fruit and spices together in a gustatory picture of absolute refinement. There is tension in the mouth, juiciness. It is an important wine, but that almost does not want to take itself seriously. Beverage to the stars. The glass ends in a moment. It lacks a little 'length on the palate and depth of drink to still be at the height of Clos Rougeard, but we are really facing a small masterpiece.

Sylvain Dittiere, son-in-law of Charly Foucault (Clos Rougeard) nicknamed "Tonton", grew up in Saumur, where his parents raised roses. After studying oenology, he worked with Gerard Gauby, Marc Tempe, Thierry Germain and Antoine Foucault.

Sylvain makes no concessions; the work in the vineyards is intense and precise to reach the ripeness and balance of each year.

In terms of vinification is all natural with a little SO2 at the end bottled without filtration or clarification, aging takes place in a combination of used barrels from Bordeaux, Burgundy and Rhone.
